Sweet Heat BBQ Chicken Sheet Pan Dinner

Sweet heat BBQ glazed chicken thighs on a sheet pan with roasted carrots, sweet potatoes, zucchini and onion

One pan. Chicken, sweet potatoes, carrots, zucchini, peppers and onion, all roasted together and finished with a sticky, sweet-and-spicy BBQ glaze.

I made this one at work as my meal prep for the next couple of days. It reheats great and keeps lunch interesting. That said, I wouldn’t hesitate to make a full tray for the guys.

The trick is the timing. The dense stuff (sweet potatoes and carrots) gets a 15-minute head start. Then the quick-cooking veggies go in, the seasoned chicken thighs get laid right on top, and everything finishes together. The glaze goes on for the last stretch so it sets up sticky instead of burning.

This one’s part of my On-Site Eats series: simple, filling meals I cook out on remote job sites.

Why the Chicken Goes on Top

I lay the thighs right on top of the vegetables instead of nestling them in. Up top, the glaze sets and caramelizes instead of steaming. And as the chicken cooks, the fat and juices drip down into the veggies underneath. That makes the vegetables a little softer than a straight roast, but the flavor is worth it. If you like your veggies firmer with more browning, nestle the chicken down between them instead.

Tips for the Best BBQ Chicken Sheet Pan Dinner

Cut everything to match. Cube the sweet potatoes to about 3/4 inch. For the carrots, leave the thin ends whole and halve or quarter the thick ends lengthwise so every piece is about the same size and cooks evenly.

Slice the onion along the grain. Cutting from root to tip keeps the slices from falling apart in the oven.

Give it room. A standard half sheet pan (18×13 inches) fits this whole recipe in a single layer. If you’re feeding more or your pan is smaller, split it between two pans and swap their oven racks halfway through. Crowded veggies steam instead of roast.

Glaze late. Honey and BBQ sauce burn if they go on too early. Brush the glaze on for the last 15 minutes only.

Want more char? Slide the tray under the broiler for a couple of minutes at the end to caramelize the glaze even more. Watch it closely.

Swap the veggies. Broccoli, cauliflower or regular potatoes go in with the first batch. Mushrooms, green beans or yellow squash go in with the second.

Line the pan with foil. Cleanup takes about 30 seconds.

Meal prep it. Portion into containers with one or two thighs and a scoop of veggies each. It keeps 3 to 4 days in the fridge.

About the Glaze

I used Kinder’s Sweet Heat BBQ Sauce, loosened with melted butter and honey, plus a little garlic and crushed thyme. Crushed thyme or rosemary both work. Either one gives a nice herby undertone to the smoky sweetness of the BBQ and honey. Any BBQ sauce works as the base, and my Honey Chipotle BBQ Sauce is a great homemade option if you want to go from scratch.

Storage and Reheating

Leftovers keep 3 to 4 days in the fridge. Reheat in the oven or an air fryer at 375°F until hot, which keeps the glaze sticky. The microwave works, but the veggies get softer.

Common Questions

Can I use chicken breast? Yes, but cut it into thigh-size pieces and check it a few minutes early, since breast dries out faster.

Bone-in or skin-on? That’s a different method with a longer cook. Check out my Crispy Sheet Pan Chicken Thighs with Roasted Vegetables for that version.

How do I know the chicken is done? It should reach 165°F in the thickest part. Thighs are forgiving, and 175°F is even better for tenderness.
