Crunchy chicken. Sticky glaze. Real heat.
I had chicken in the freezer and no plan. A quick pantry check turned up a bottle of hot sauce, brown sugar, soy and vinegar, and that’s all firecracker chicken needs. Cornstarch-coated bites get fried until crunchy, then tossed in a sweet, spicy glaze that clings to every piece. It goes over a bowl of white rice and it’s done.

Why It Stays Crunchy
Cornstarch is the trick. It fries up lighter and crispier than flour, and it holds up under the sauce. The glaze is thick and sticky on purpose. It coats each piece without soaking it, so you still get the crunch in every bite.
Picking Your Heat
The base is Frank’s RedHot or Crystal, whichever you have. Sriracha adds a little garlic and depth, and red pepper flakes bring a slow burn. For real fire, add a few dashes of habanero sauce. I used Melinda’s. Want it milder? Leave out the habanero and the flakes, and it’s still plenty of flavor.

Tips for the Best Firecracker Chicken
Fry in batches. Crowding the pan steams the chicken and the crunch goes soft.
Toss right before serving. The glaze sets up as it cools, so sauce it hot and eat it hot.
Thick glaze is normal. It should coat the back of a spoon. If it gets too thick, a splash of water loosens it.
What to Serve With It
Steamed white rice, or Cilantro Lime Rice. Sliced green onions or sesame seeds are great on top if you have them.

Method
- Pat the chicken dry. Toss it in a bowl with the cornstarch, garlic powder, paprika, salt, pepper and cayenne until every piece is coated.
- Heat the oil in a large skillet over medium-high heat. Fry the chicken in batches, 3 to 4 minutes per side, until golden, crunchy and cooked through (165°F). Drain on a wire rack or paper towels.
- In a small saucepan, whisk together the hot sauce, sriracha, brown sugar, vinegar, soy sauce, garlic, ginger, red pepper flakes and habanero sauce. Bring it to a simmer over medium heat.
- Stir the cornstarch and water together, then stir the slurry into the sauce. Simmer 1 to 2 minutes, until thick and glossy. Take it off the heat and stir in the sesame oil.
- Toss the chicken in the sauce and serve right away over rice.
