Zesty Cilantro Lime Rice

Homemade Zesty Cilantro Lime Rice

If you’ve been drowning in chile verde and taco fillings lately, this rice is here to give them something worthy to sit under. It comes together in about 30 minutes in one pot, and it’s ridiculously easy – toast the rice, simmer it low and slow, then finish it off with a big hit of fresh lime and cilantro right at the very end. No fancy technique required, just good timing.

This is my taco-night rice. It’s easy, and it cools things off next to spicy, heavily seasoned fillings. The lime and cilantro give every bite a little lift.

Fluffy, separate grains (not the gummy, clumpy stuff) with lime zest and cilantro folded in at the end, so the flavor stays punchy instead of fading. If you like the rice at your favorite burrito place, you’ll like this one.

How to Make Fluffy Cilantro Lime Rice

The real secret is rinsing the rice before it ever touches the pot. Washing off that extra surface starch is what keeps the grains fluffy and separate instead of gummy and clumped together. From there it’s a simple simmer-and-rest method – cover it, let it steam undisturbed, then walk away for ten minutes before you touch it again. The lime zest, lime juice, and chopped cilantro go in last, off the heat, so you get bright, fresh flavor instead of a dull, cooked-out one.

Zesty Cilantro Lime Rice

Fluffy white rice tossed with fresh lime juice, zest, and cilantro – a bright, zesty side ready in about 30 minutes.
Prep Time 5 minutes
Cook Time 25 minutes
Servings: 4 servings
Course: Side Dish
Cuisine: Mexican

Ingredients

  • 1 cup long-grain white rice jasmine or basmati
  • 1 1/2 cups water or low-sodium chicken broth
  • 1 tbsp butter or neutral oil
  • 1/2 tsp kosher salt
  • 1 bay leaf optional
  • 1 lime, zested and juiced about 2 tbsp juice
  • 1/3 cup fresh cilantro chopped

Equipment

  • Medium Saucepan with Lid

Method

  1. Rinse the rice in a fine-mesh strainer under cold water until it runs clear, then drain well. This washes off the extra starch so the grains cook up fluffy instead of gummy.
  2. Melt the butter (or heat the oil) in a medium saucepan over medium heat. Add the rinsed rice and toast for 1-2 minutes, stirring constantly, until fragrant.
  3. Pour in the water or broth, then add the salt and bay leaf. Bring to a rolling boil.
  4. Cover with a tight-fitting lid, drop the heat to low, and simmer undisturbed for 15 minutes.
  5. Remove the pot from the heat, keeping it covered, and let it rest for 10 minutes so it finishes steaming.
  6. Discard the bay leaf. Add the lime zest, lime juice, and chopped cilantro, then fluff everything together gently with a fork – don’t stir hard or you’ll mash the rice.
  7. Serve warm alongside your favorite Mexican-inspired main.

Notes

This is the perfect sidekick for our Fork-Tender Pork Chile Verde or the Dump-and-Go Crockpot version – just spoon some rice into the bowl first and ladle the chile verde right over the top.
Leftovers keep in the fridge for about 4 days. Reheat with a splash of water or broth so it steams back to fluffy instead of drying out.
Want to bulk it up? This recipe doubles easily – just make sure your pot is big enough that the rice isn’t more than about 2 inches deep, or the middle can end up undercooked.

This is the exact rice we’ve been spooning into bowls under our Fork-Tender Pork Chile Verde and the Dump-and-Go Crockpot version, but it’s just as good under grilled chicken, tucked into a burrito, or eaten straight out of the pot with a fork (no judgment here). Make a batch tonight – it disappears fast.
