Chile verde has a reputation for being an all-day project, and most versions really are. This one skips that memo. You still get pork so tender you could cut it with a spoon, staying in nice hearty chunks, and a sauce good enough to drink — just without babysitting a pot all afternoon. Jarred salsa verde does most of the heavy lifting, doctored up with green chiles, jalapeños, and a smoky spice blend until it tastes like way more effort went into it than actually did.
The Secret to Really Good Pork Chile Verde
Two small things make a real difference here. Half the spice blend gets mixed into the flour before the pork gets seared, so you’re building flavor into the crust instead of leaving it all to float around in the sauce. The cilantro gets the same treatment — half cooks down into the braise for depth, the rest stays fresh for a bright finish on top.
However you cook it — stovetop, oven, or a quick sear followed by the slow cooker — you land in the same place: a thick, tangy, faintly smoky chile verde that’s just as good spooned into burritos as it is ladled over rice and beans.

Method
- Make the seasoning blend: in a small bowl, stir together the cumin, chili powder, onion powder, garlic powder, and black pepper. Divide the blend in half – whisk one half into the flour, and set the other half aside for the sauce.
- Dredge & sear: Pat the pork cubes dry with paper towels, then toss with the seasoned flour to coat lightly, shaking off the excess. Heat the oil in a large Dutch oven over medium-high heat and brown the pork in batches until it develops a deep, golden crust. Remove and set aside.
- Sauté the onion in the same pot for 4-5 minutes, until soft and translucent. Stir in the garlic and half the smoked paprika and cook about 1 minute more, until fragrant.
- Return the seared pork to the pot. Pour in the salsa verde, broth, green chiles, and diced jalapeños, then stir in the reserved half of the seasoning blend, the remaining smoked paprika, and half the chopped cilantro (save the rest for garnish). Bring to a gentle bubble.
- Stovetop: cover tightly, reduce the heat to low, and simmer for 1.5-2 hours, stirring occasionally. Oven: cover tightly and bake at 300°F for 2 hours instead.
- Remove the lid and taste. Add the lime juice a tablespoon at a time until the sauce is bright and balanced, and adjust the salt if it needs it – go easy, since the salsa and broth already bring plenty. The pork should be fork-tender but still hold together in nice, hearty chunks (not shredded), and the sauce should be thick.
- Serve hot in bowls with warm tortillas, shredded cheese, and sour cream or Greek yogurt, or spoon it over rice, cilantro-lime rice, or seasoned black beans for burritos and burrito bowls. Garnish with the remaining cilantro, plus extra if you want a fresher hit of flavor.
Notes
This one makes more than you’ll eat in one sitting, and that’s the point. Chile verde reheats like a dream — some would argue it’s even better the next day — so stash the extra and turn it into breakfast burritos, loaded nachos, or a lazy quesadilla later in the week.
