Ingredients

The Meat & Base
  • 3 lbs pork loin cut into 1-inch cubes (or pre-cut pork stew meat)
  • 1/4 cup all-purpose flour for dredging
  • 2-3 tbsp cooking oil or lard for searing
  • 1 large yellow onion diced
  • 4-5 cloves garlic minced
The Sauce & Liquids
  • 1-2 jars salsa verde (12-16 oz each) your favorite - use 2 jars for the best sauce volume, 1 if you want something more concentrated
  • 2-3 cups chicken broth or bone broth more than you might expect - the extra volume is what gives you a real sauce to simmer down
  • 2 cans diced green chiles (4 oz each)
  • 1/2-1 can diced jalapeños (4 oz) mild or hot, to taste - start with half a can for a family-friendly heat level, use the whole can for more kick
The Spices & Extras
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1-2 tsp black pepper
  • 2 tsp smoked paprika divided
  • salt to taste (add after browning - the salsa and broth already bring plenty of sodium)
  • 1/2 cup fresh cilantro chopped, divided
  • 2-3 tbsp fresh lime juice added at the end, to taste

Equipment

  • Dutch Oven or Large Heavy Pot

Method

  1. Make the seasoning blend: in a small bowl, stir together the cumin, chili powder, onion powder, garlic powder, and black pepper. Divide the blend in half - whisk one half into the flour, and set the other half aside for the sauce.
  2. Dredge & sear: Pat the pork cubes dry with paper towels, then toss with the seasoned flour to coat lightly, shaking off the excess. Heat the oil in a large Dutch oven over medium-high heat and brown the pork in batches until it develops a deep, golden crust. Remove and set aside.
  3. Sauté the onion in the same pot for 4-5 minutes, until soft and translucent. Stir in the garlic and half the smoked paprika and cook about 1 minute more, until fragrant.
  4. Return the seared pork to the pot. Pour in the salsa verde, broth, green chiles, and diced jalapeños, then stir in the reserved half of the seasoning blend, the remaining smoked paprika, and half the chopped cilantro (save the rest for garnish). Bring to a gentle bubble.
  5. Stovetop: cover tightly, reduce the heat to low, and simmer for 1.5-2 hours, stirring occasionally. Oven: cover tightly and bake at 300°F for 2 hours instead.
  6. Remove the lid and taste. Add the lime juice a tablespoon at a time until the sauce is bright and balanced, and adjust the salt if it needs it - go easy, since the salsa and broth already bring plenty. The pork should be fork-tender but still hold together in nice, hearty chunks (not shredded), and the sauce should be thick.
  7. Serve hot in bowls with warm tortillas, shredded cheese, and sour cream or Greek yogurt, or spoon it over rice, cilantro-lime rice, or seasoned black beans for burritos and burrito bowls. Garnish with the remaining cilantro, plus extra if you want a fresher hit of flavor.

Notes

Want a completely hands-off version? Check out our Dump-and-Go Crockpot Pork Chile Verde - no searing at all, just everything in the slow cooker before you head out the door.
Prefer things simpler? Skip seasoning the flour and stir the whole spice blend into the sauce in step 4 instead - still great, just a slightly different crust flavor on the pork.
Need a side to go with this? Our Zesty Cilantro Lime Rice is fantastic spooned into the bowl first with the chile verde ladled right over the top.
Leftovers keep in the fridge for about 4 days, or freeze for up to 3 months - reheat gently on the stovetop so the sauce doesn't break.
The spice amounts here are meant to be a safe, conservative starting point - just enough earthy warmth from the cumin and smoked paprika to cut through the salsa's acidity without taking over. Taste as you go during the sauce step and bump anything up to your liking.
